"The best proseccos spumante (sparkling wine) come from the Valdobbiadene area of Italy. Montalbano has a small vineyard in the valley, still cultivated using natural methods without the use of chemicals, and produces prosecco, the grapes that are used to produce this sparkling wine. The Prosecco is produced following the Charmat process, as opposed to the Champenoise that is used to make Champagne, where the second fermentation takes place in the tanks instead of the bottle. The result is an extra dry Prosecco that makes the perfect aperitif, but also is a perfect accompaniment to fish. The colour is a brilliant straw-yellow, while on the nose it has a fresh and complex bouquet, with hints of flowers and notes of apple, pear, and lemon. On the palate it is velvety, dry and rich."
